Great board! One of my rules of thumb is the brighter the color, the better it is for you. Unless it is mold.

We try to eat a lot of fruits and vegetables in my house. I wonder about losing nutrients during the cooking process. We steam most of our veggies; is it best to eat mostly raw vegetables?

This is definitely my favorite board of yours -- would love to learn more about which foods are the most nutrient-dense!
