Nikki, I love these options... as someone who crew up highly carnivorous, I've slowly gone through vegetarian years, vegan years, back again, and now to a whole food - plant based diet (true: forks over knives). Outside of one or two cookbooks, I struggle to find recipes that truly make that leap (ie. no oil, etc...). Have you found any great sites or books that have truly plant-based options?

Maggie, Yes!! Engine2.com and HappyHerbivore.com are great places to start. The latter even offers weekly meal plans, with recipes (for 1 or for a family) that is super simple.
