Anyone every tried to make hummus from kidney beans? I'd like to try it but think it might be disastrous.

Sure--there are plenty of recipes including adding them to salads, soups, stews, veggie burgers, and one of my favorite--hummus, dips, etc. that can be eaten with fresh vegetables. I would recommend, though, if you don't like the taste/texture, you start with dips/purees. I didn't used to like beans that much, but much of it for me was acquired and learning which ones I liked and how I liked them cooked.

I want to like beans so bad, but I just can't handle the taste/texture. Because beans take your body longer to break down, they don't result in the same spikes in insulin that you get from processed carbs. The problem is, there doesn't seem to be a good way to eat them without processed carbs. Does anyone have delicious recipes that include beans but not tortilla, bread, pizza, etc...
